Rabbit Hole has announced the launch of Dareringer Founder’s Collection, a cask-strength Kentucky Straight Bourbon Whiskey finished in PX Sherry casks.
Dareringer Founder’s Collection is the fourth release in the Rabbit Hole Founder’s Collection and re-imagines Rabbit Hole Dareringer – a Kentucky Straight Bourbon Whiskey finished in PX Sherry casks that was launched in 2016 as part of the brand’s core range – through a more pronounced sherry profile.
Dareringer Founder’s Collection was created from a mash bill of 65% Corn, 25% Rye, and 10% Malted Barley, aged in #4 toasted and charred new American oak barrels and finished in PX Sherry casks crafted by the Cabello family of the Casknolia Cooperage in Southern Spain. These finishing casks were made from rare, 60-year-old wood used to age a succession of PX sherry, brandy, and PX sherry in partnership with three of Spain’s oldest and most revered producers.
Bottled at a cask strength of 102.1 proof (51.1% ABV), Rabbit Hole Dareringer Founder’s Collection has aromas of “custard, walnut, brown sugar and baking spices.” The palate is “refined and smooth with a pleasing viscosity that carries notes of cinnamon, oak, tobacco and stone fruit with blackcurrant, cherry and lemon influences, touched by a hint of Rabbit Hole’s signature floral note.” It concludes with a “medium-to-long finish of toffee and pecans with a kiss of light spice.”
Rabbit Hole Dareringer Founder’s Collection is presented in a wooden box engraved with the brand’s rabbit marque, and the bottle features embossed-glass detailing of the brand’s sash label and is sealed with a gold cork.
Rabbit Hole Dareringer Founder’s Collection is limited to 2,444 sequentially-numbered bottles. It will be available beginning this month at the Rabbit Hole Distillery and select retailers nationwide for a suggested retail price of $295 per bottle.
