Wiggly Bridge Distillery is releasing its latest limited bourbon release. The distillery will only release 86 bottles of the 115.9-proof Dave’s Special Barrel Project #3. The spirit will be available on Friday, Nov. 11, for $159.99 each.

This project was born from an ex-bourbon barrel that White Mountain Winery in North Conway, New Hampshire, used to age a dessert wine. The wine was 50% green apple, 25% Maine blueberries and 25% pear.

The day the Wiggly Bridge owners dumped barrel #572, the initial flavor note they enjoyed was a smooth mid-palate experience. The blueberry notes kicked in after a couple of seconds, accompanied by vanilla notes. This developed into the flavors of blueberry crumble with vanilla ice cream. These notes engulf the palate for several minutes and are a full sensory experience filled with robust flavor.

It all started during a family dinner with a joking statement, “let’s make our own whisky.” With a shared love for good whisky and fascination to see how things are made, this father-and-son team decided to explore the idea. David and David Woods researched and studied (and some say obsessed) over how to build a still and process alcohol.

Being fortunate enough to travel to the Caribbean, they decided to build and operate a small hand-made copper still on Montserrat island to test their research. Turns out they were quite good at it and grew even more intrigued by the craft of small-batch distilling. What they made rivaled some of their favorite brands, with a bit of a twist.

Now, winning awards, the Woods family understands that they have created something very special.
